The Lot
Doyo
This washed lot from Doyo Cooperative was produced in Mana District, Jimma, at elevations of 1,900 to 2,000 metres from Ethiopian varieties 74110 and 74112. In the cup it shows a profile of grapefruit, orange and plum, supported by deeper notes of sticky date, caramel, toasted almond, cocoa and black tea. That balance of bright citrus, ripe fruit and darker sweetness is characteristic of the best washed coffees from Jimma, where high elevations and local selections can produce coffees with both clarity and depth. The washed process helps emphasise structure and transparency, allowing the fruit, sweetness and tea-like finish to come through with particular precision.

DOYO COOPERATIVE
Doyo Cooperative forms part of the Jimma Farmers Multi-Purpose Agricultural Cooperatives Union, one of Ethiopia’s largest smallholder coffee organisations. Founded in 2004 with 14 primary cooperatives, the union has grown to include more than 200 cooperatives and represents well over 140,000 farmer members across western Ethiopia. Within this system, cooperatives such as Doyo act as the link between individual smallholders and the export market, collecting cherry from surrounding farms, overseeing processing, and helping maintain quality standards. This structure is central to coffee production in Jimma, where coffee is typically grown on small plots by farming families rather than on large estates, and where cooperative processing allows coffees from many growers to be combined into lots that still retain a strong regional identity.
What is it?
THE BIRTHPLACE OF COFFEE?
Doyo Cooperative sits in Jimma, in southwestern Ethiopia, a region within the country widely regarded as the birthplace of Arabica coffee. Ethiopia’s forests are home to coffee’s oldest known origins, and coffee remains deeply woven into both the landscape and everyday agriculture of regions such as Jimma, where smallholder farmers cultivate it on tiny plots alongside food crops and shade trees. Doyo forms part of that long tradition, collecting and processing coffee from growers in Mana District before preparing it for export. Through cooperatives such as this, coffees from many neighbouring farms are brought together into lots that reflect both Ethiopia’s historic relationship with coffee and the distinctive character of Jimma itself: sweet, structured coffees with floral lift, citrus brightness, and a more rounded depth than many people expect from washed Ethiopian profiles.

Billing Cycles
Your subscription will renew on the same date that you signed up, every month. Your coffee for the month will be dispatched as soon as possible after your subscription renews.
NOTE: If you subscribe before 01/02/26 then your renewal date will be manually adjusted to first renew 01/03/26 and on the 1st of every month thereafter.
What coffees will i get?
It's a mystery, that's the point! We can only promise that each month's coffee will be different, be it through process, origin, varietal or a combination of things, and always sourced as traceably as possible so that we can give you maximum insight into where your beans are coming from.
What if I don't like a coffee?
Hard to imagine, I know, but not every coffee can suit every pallette. The whole concept behing Roaster's Choice is that we'll be challenging you to try something that you wouldn't otherwise have been able to.
So if one coffee doesn't suit you, we encourage you to stick with us. They won't all be whacky anaerobic fruit bombs, or super lightly roasted Geishas, some will just be really really good at being solid everyday brews!
Can I combine roaster's choice with any of your other subscriptions?
