The Lot
Ijen Highlands
This lot is naturally processed using carefully selected ripe cherry sourced from the highlands surrounding Mt. Ijen in East Java. Kevenka Coffee use colour sorting technology to improve cherry consistency before drying, helping create a cleaner and more controlled natural process. Due to the region’s humid climate, the coffee is dried with careful environmental control, including the use of mechanical drying to maintain stability and consistency throughout processing. The result is a clean and fruit-forward lot with notes of cherry, strawberry, vanilla, dark chocolate, and almond.
The Producers
Kevenka Coffee
Kevenka Coffee was founded by brothers Kevin and Kenny Soewondo in Surabaya, East Java, after initially starting with a café and roastery before moving into coffee processing and green coffee export. Working with producers in the highlands surrounding Mt. Ijen, they have invested heavily in improving quality through modern processing techniques, including cherry colour sorting and mechanical drying systems. Their approach focuses on creating cleaner, more consistent coffees while building long-term relationships with local farmers in a region traditionally known for wet hulled production.
What is it?
A DIFFERENT INDONESIAN COFFEE
Unlike more traditional Indonesian coffees, which are commonly processed using the wet hulled method and often produce heavier, earthy flavour profiles, this lot has been processed as a carefully controlled natural. Kevenka Coffee focus heavily on ripe cherry selection, consistency, and controlled drying, resulting in a cleaner and more fruit-forward cup. The combination of modern processing techniques and careful quality control gives the coffee greater clarity and sweetness, while still retaining the rich body often associated with coffees from the region.

Billing Cycles
Your subscription will renew on the same date that you signed up, every month. Your coffee for the month will be dispatched as soon as possible after your subscription renews.
NOTE: If you subscribe before 01/02/26 then your renewal date will be manually adjusted to first renew 01/03/26 and on the 1st of every month thereafter.
What coffees will i get?
It's a mystery, that's the point! We can only promise that each month's coffee will be different, be it through process, origin, varietal or a combination of things, and always sourced as traceably as possible so that we can give you maximum insight into where your beans are coming from.
What if I don't like a coffee?
Hard to imagine, I know, but not every coffee can suit every pallette. The whole concept behing Roaster's Choice is that we'll be challenging you to try something that you wouldn't otherwise have been able to.
So if one coffee doesn't suit you, we encourage you to stick with us. They won't all be whacky anaerobic fruit bombs, or super lightly roasted Geishas, some will just be really really good at being solid everyday brews!
Can I combine roaster's choice with any of your other subscriptions?
Absolutely! If you have any questions about consolidating subscriptions into single shipments, or adjusting billing dates to spread them out then you can either make changes through the subscription portal, or just email tom@fullspectrumcoffee.com
