The Lot

CIASU PEABERRY

Ciasu is a lot from Mió Coffee Farm, a family-run farm in Monte Santo de Minas where coffee is grown, processed, and prepared for export on site by the same returning team each year.

This selection is a peaberry screen taken from across a number the farm's lots. The focus here is on careful natural processing: whole cherries are first dried on raised beds and patios, then finished in mechanical dryers. This staged drying helps develop a fruit-forward profile while keeping the cup clean and well structured.

The Producer

ANA LUIZA PELLICER

Ana Luiza Pellicer is a fourth generation coffee producer focused on helping her family’s farm adapt to the future of coffee growing. Alongside her work at origin, she has spent time researching the specialty coffee industry in Europe to better understand how producers can respond to shifting climates and changing expectations in the market.

Her approach brings together farm knowledge passed down through generations with research into new practices, with the aim of keeping the farm resilient and one step ahead of the challenges climate change is bringing to coffee production.

What is it?

PEABERRY

Peaberry coffees are a small, naturally occurring selection within a harvest where the cherry develops a single rounded seed rather than the usual two beans. During milling, these smaller, round seeds are separated and screened into their own lot, which allows them to be roasted with a profile tailored to their shape and density.

In the roaster, peaberries tend to move and heat very evenly, often producing a cup with a focused sweetness, bright structure, and a silky texture. For us, they offer a chance to highlight a slightly different expression of a farm’s coffee, with clarity and depth that can feel especially lively in the cup.

Roaster's Choice FAQs

Billing Cycles

Your subscription will renew on the same date that you signed up, every month. Your coffee for the month will be dispatched as soon as possible after your subscription renews.

NOTE: If you subscribe before 01/02/26 then your renewal date will be manually adjusted to first renew 01/03/26 and on the 1st of every month thereafter.

What coffees will i get?

It's a mystery, that's the point! We can only promise that each month's coffee will be different, be it through process, origin, varietal or a combination of things, and always sourced as traceably as possible so that we can give you maximum insight into where your beans are coming from.

What if I don't like a coffee?

Hard to imagine, I know, but not every coffee can suit every pallette. The whole concept behing Roaster's Choice is that we'll be challenging you to try something that you wouldn't otherwise have been able to.

So if one coffee doesn't suit you, we encourage you to stick with us. They won't all be whacky anaerobic fruit bombs, or super lightly roasted Geishas, some will just be really really good at being solid everyday brews!

Can I combine roaster's choice with any of your other subscriptions?

Absolutely! If you have any questions about consolidating subscriptions into single shipments, or adjusting billing dates to spread them out then you can either make changes through the subscription portal, or just email tom@fullspectrumcoffee.com
