We've been sitting on releasing this one for a while, but it's absolutely been worth the wait. This coffee is magical! 

It wasn't easy to make tasting notes for though, there is A LOT going on in this one. What's on the bag is the flavours that most stood out for us, but you'll be sure to find your own notes in there too.

Expect all of the big, juicy flavours you'd normally see in a good natural processed coffee, but with a clarity and complexity usually reserved for washed processes. Plus a totally off the wall green banana note on the back end, especially noticeable on pour over. On espresso you'll find a juicy, complex structure that comes with a really satisfying jammy body and a pleasant but not overbearing acidity

We only have a single sack of this incredible lot, so it's not going to be sticking around for long!

ABOUT THE PRODUCER

 

Yolanda owns El Triunfo farm in Las Pacayas, Corquin, Copan. With her husband Luis and their three agronomy-student sons, they manage the two-hectare farm, which primarily grows Red Catuai coffee known for its high production yields and quality. Emphasizing biodiversity, they maintain native forests and shade trees, attracting wildlife and ensuring environmental harmony.

They also grow vegetables and raise cows, using their manure as fertilizer, and follow biodynamic farming practices, though not officially certified. Their approach integrates coffee cultivation with the natural ecosystem to enhance coffee quality.
